Watermelon-Orzo-Feta Salad

Watermelon-Orzo-Feta Salad

In large pot:

1/2 lb orzo

½ tsp salt

Cook in plenty of water til done to desired taste but not too soft.

Drain well. Rinse with cold water. Cool (can refrigerate for couple hours.)

Mix dressing:

4 tbsp fresh lime juice (2 limes)

Zest of one lime

1 tsp honey

¼ - ½ cp finely chopped fresh basil

¼ tsp pepper

½ tsp salt

Mix well (can shake in small bottle)

In large bowl, mix salad ingredients:

Cooked, cooled orzo

Dressing (stir well with the orzo before adding the rest)

2 cups packed baby spinach or arugula

4-6 cups cubed watermelon

1 cup crumbled feta cheese

1 big cucumber, chopped

Mix lightly but thoroughly.

Sprinkle with chopped mint leaves or more basil and a bit more feta.

Optional: toasted almonds or pine nuts (1/4 cup)
