Sweet Potato and Cauliflower Mini Pizzas

Sweet Potato and Cauliflower Mini Pizzas

1 large white or orange sweet potato, (peeled, cooked, and mashed. (about 250 mL)
250 mL Cauliflower, riced
250 mL bread flour
2 mL (1/2 tsp) sea salt
1 egg, whisked
125 mL pizza sauce
250 mL Shredded Mozzarella cheese

Place the riced cauliflower, flour, and salt in a large mixing bowl; mix with a pastry cutter to combine. Work the cooled sweet potatoes and egg into the dough.

Divide the dough into 4 equal pieces. Shape pieces into balls, then press them into disks. Place 1 disk on a piece of flour-dusted parchment paper, then place another piece of parchment paper on top—shape and roll dough into a 15cm crust. Repeat for the other pieces. (I skip this... use your hand to flatten on the parchment paper, if sticky toss a little flour on top. Can make 1 large pizza instead of small ones).

Place crusts on a parchment-lined baking sheet. Bake for about 20 minutes, until the disks hold their shape and an inserted toothpick comes out clean.

Spread pizza sauce on crusts and sprinkle with mozzarella. It works well to add other toppings. Return to oven, and bake for about 10 minutes until cheese starts to turn golden brown. Makes 4 servings.

Tips:

1. You can buy packages of precooked riced cauliflower at the grocery store (or you can get many in a box at Costco).

2. Sweet potatoes - you can cook extra or use your leftovers from Thanksgiving as they freeze nicely.

3. I use whatever kind of flour we have... all are good.

We love this recipe as it's a great way to sneak in some extra vegetables AND you can seriously not taste the sweet potatoes or cauliflower. It makes a pretty nice crust. They freeze well.
