Salsa
Into a large bowl:
10 lb tomatoes, chopped
4 cups chopped onions
2 cups chopped green peppers
2 chopped jalapeno peppers
1 cup chopped cilantro
12 chopped garlic cloves
Into a very large pot:
4 cups tomato sauce (3 – 398 ml cans)
4 cups tomato paste (7-15 ml cans)
1 3/4 cups vinegar
2/3 cup sugar
4 tbsp canning salt
4 tsp cumin
4 tsp pepper
Next Steps
1. Cook 20 minutes, uncovered.
2. Pour into jars (15 pints plus a few smaller jars)
3. Process 15 minutes in boiling water bath.
