Norwegian Lefsa
A dutch oven full of boiled potatoes, well-drained and well-mashed. Cool real well.
Add 1/2 cup cream or butter.
Mix in flour until it feels like pie crust. Add a handful of salt.
Let it stand a half hour before rolling it out very thin.
Bake in an electric fry pan until slightly brown.
Hot potatoes and too much flour will make them tough.
