Cranberry Scones (from Fishing Lake Golf Course)
In one bowl:
2 cups flour
7 tsp white sugar
1 tbsp grated orange peel
2 tsp baking powder
½ tsp salt
¼ tsp baking soda
Cut in 1/3 cup cold butter with pastry blender til coarse crumbs.
Second bowl:
1 cup dried cranberries (do not cut up)
¼ cup orange juice
½ cup milk
1 beaten egg
Follow these instructions:
1. Oven to 400.
2. Add second bowl of wet ingredients to first bowl.
3. Combine til it becomes a soft dough.
4. Knead 6-8 times. Don’t overdo it.
5. Lay dough on lightly floured surface.
6. Pat into 8-inch circle.
7. Cut into 8 wedges.
8. Place on heavy cookie sheet lined with parchment paper.
9. Brush with milk.
10. Sprinkle with remaining sugar (3 tsp).
11. Bake in 400 oven for 10-12 minutes (only til light brown shows on tops).
Glaze:
½ cup icing sugar
1 tbsp orange juice
1 ½ tsp almond extract
1. Mix it all together.
2. Drizzle over cooled scones.
