Banana Sheet Cake

Banana Sheet Cake
Oven to 350
First:
3 cups flour
1 1/8 tsp baking soda
¾ tsp baking powder
¾ tsp salt
Second:
¾ cup butter or marg, softened
2 ¼ cups sugar
Third:
3 large eggs
1 tsp vanilla
1 1/8 cups sour cream (fat free works well)
2 cups mashed bananas (4 bananas)
3 Tbsp fresh lemon juice
Frosting:
1/4 cup butter or marg
2 cups icing sugar
1 ½ Tbsp milk
1 tsp rum flavoring
Grated orange peel (1 – 2 tbsp)
Follow these instructions:
1. Lone sheet can pan, like jelly roll pan with raised sides) with parchment.
2. Whisk first set of ingredients and set aside.
3. Beat second set for 3 minutes.
4. Add third set.
5. Add first set. Use STIR on mixer. Don’t overmix.
6. Pour into prepared pan. Bake for 25-30 minutes. (I did 38 minutes.)
Check with toothpick to make sure middle is baked.
7. Cool on rack.
8. Mix all icing ingredients together with mixer. Spread on cooled cake.
